Spiced Pumpkin Soup
1 tbsp oil
1 c onion, chopped
2 garlic cloves, minced 3 tbsp flour
1/4 tsp nutmeg
1/4 tsp ground cumin
1/4 tsp cinnamon
1 c cubed, peeled, tart apple
1 c peeled and cubed sweet potato
3 1/2 to 4 c pumpkin, peeled and cubed
2 cans (14 oz each) chicken broth
1 c milk
salt to taste
Heat oil in large pot. Fry onions and garlic over medium-low heat for 3 to 4 minutes. Add flour and spices, and continue to saute for another 1 to 2 minutes. Add apples,sweet potatos, pumpkin, and chicken broth. Simmer partially uncovered for about 30 minutes or until the ingredients like the pumpkin become soft. Mash or blend cooled batches of soup, then put back in the pot, add milk and continue to cook for another 5 minutes on medium heat. Serve with a salad and whole wheat bread.
