Rhubarb/Apple Crisp (use 350 F oven)
2 c fresh rhubarb, chopped in 1/2" pieces
1 c apple, chopped in 1/2" pieces
3/4 c sugar (white)
1 tbsp flour
1 egg, well beaten
1/2 to 1 tsp cinnamon
Topping
1/3 c brown sugar
1/4 c margarine
2/3 c flour
Mix together suar, egg, cinnamon and 1 tbsp flour. Add chopped rhubarb and apple, mix well. Place in greased casserole dish.
Topping
Combine brown sugar and flour, then cut in margarine to make crumbly topping. Pat topping onto rhubarb mixture. Bake for about 35 minutes or until rhubarb is tender.
